Turkish White Bean Stew (Kuru Fasulye)

Drain the soaked beans and boil in fresh water for 10 minutes; discard that water.

Sauté the onion in oil. If using meat, add and sear until browned.

Add the pastes and sauté; then add the beans and hot water or broth.

Simmer on low heat for 60-70 minutes or until the beans are tender.

Season with salt, black pepper and red pepper flakes; cook 10 more minutes.

Serve alongside rice pilaf and fermented vegetables.
