Rice with Vermicelli

Rinse the rice and soak in hot salted water for 20 minutes; drain.

Melt butter in a pot and toast the orzo until golden.

Add the drained rice and sauté for 2 minutes.

Add hot water and salt; stir and bring to a boil.

Reduce to low heat, cover and cook for 18 minutes.

Remove from heat, place paper towel under lid, rest for 10 minutes, then fluff and serve.
