Mussel Rice Pilaf

Rinse the rice and soak for 20 minutes; drain.

Toast pine nuts in olive oil until golden; add the onion and sauté.

Add rice and currants; sauté. Add spices and sugar.

Add the mussels and cook for 2 minutes.

Add hot water and salt; once boiling, cover and cook on low for 18 minutes.

Rest off the heat and serve sprinkled with fresh dill.
