Ezogelin Soup

Finely chop the onion and sauté in butter; add tomato paste and cook 2 more minutes.

Add rinsed lentils and water; bring to a boil.

Simmer on low heat for 20 minutes. Add bulgur and cook another 10 minutes.

Add salt, red pepper flakes, cumin and mint; stir well.

For the sauce: melt butter, add red pepper flakes and heat for 30 seconds.

Ladle into bowls and top with pepper butter and dried mint.
