Tarhana Soup

Soak the tarhana powder in 1 cup of cold water for about 30 minutes.

Melt butter in a pot, add tomato paste and sauté.

Add the remaining water and bring to a boil.

Add the soaked tarhana and cook, stirring constantly, until thickened.

Season with salt and red pepper flakes; simmer on low heat for 10 more minutes.

Sprinkle with dried mint and serve hot.
