Turkish Mixed Pickles (Turşu)

Wash and cut vegetables to appropriate sizes.

Pack tightly into jars with garlic and chickpeas.

Boil water, vinegar and salt, let cool.

Pour cooled brine over vegetables — they must be fully submerged.

Seal and store in cool dark place for 7-10 days.
