Spinach Börek

Sauté the onion in olive oil; add chopped spinach and cook until moisture evaporates. Season.

Mix the cooled spinach with the crumbled white cheese.

Whisk eggs, yogurt, oil and milk together for the sauce.

Lay one pastry sheet in a greased tray; brush with sauce. Layer 3 sheets total, brushing each.

Spread the spinach filling; cover with remaining sheets, each brushed with sauce.

Brush the top with sauce and bake at 180°C for 35-40 minutes until golden.
