Menemen (Turkish Egg Scramble)

Grate the tomatoes. Dice the peppers into small cubes.

Melt butter in a pan. If using onion, sauté it first.

Add peppers and sauté 2 minutes.

Add grated tomatoes. Cook on medium heat until liquid reduces.

Crack in the eggs and gently stir for a creamy texture.

Season with salt, black pepper and red pepper flakes. Serve hot from the pan.
