Profiteroles

Boil water, butter and salt. Add flour all at once and stir vigorously until the dough pulls away from the sides.

Remove from heat; once slightly cooled, add eggs one at a time, mixing thoroughly after each.

Preheat oven to 200°C. Pipe walnut-sized mounds onto lined baking sheets.

Bake 20-22 minutes. Do not open the oven during baking.

For the filling: bring milk to a boil; thicken with starch, sugar and vanilla; cool completely.

Melt chocolate with cream for the sauce. Fill the shells with cream and drizzle with sauce.
